Selenium is found in high concentrations in muscle and organ meats, whereas most fruits and vegetables are low in this element. Selenium is a constituent of glutathione perioxidase and 5’-iodinase, an enzyme used in thyroid hormone metabolism.

Vitamin E and B2 (Riboflavin) are important to the metabolism of Selenium. Odor modified garlic is a source of Cysteine, an amino acid used in selenium metabolism.
