Wheat free/Gluten free Crumbing
Easy Gluten Free /Wheat Free Crumbing
This method can be used for
chicken, fish or meat.
Ingredients:
*2 eggs
(substitute milk for eggs)
*1 cup of flour (pure corn flour,
arrowroot, tapioca, potato or rice)
*1 tblspn of mixed herbs Salt and
pepper Seasoning of choice (eg. Lemon Pepper Seasoning)
*Crumbs (use breadcrumbs made from
crusts of left over bread, cornflake crumbs, rice crumbs, rice flake crumbs or
even sesame seeds can also work well)
Method:
Place eggs in a bowl and beat
well. (Milk if needed) In a bag place flour with seasoning and herbs. In a bag
place crumbs. Place meat in the flourbag and shake until meat is coated. Then
dip in the egg (or milk). Place meat in the crumbs bag and shake again until
completely coated. I found if I prepare this a little ahead of time it seems
to set before I cook and the crumbs do not peel off. Heat pan to a medium
temperature and fry meat in a little olive oil. Tip: Keep all left over bread
in a bag in the freezer & keep adding to it. When the bag is full blend them
in the food processor. Put them back into the bag so you can easily crush them
when you need them. Return them to the freezer for fresh breadcrumbs when you
need.
