Gluten Free Bread
Banana Bread
Ingredients:
• 2 cups Muffin Mix
• ½ cup sugar or sweetener
• 1 tblspn butter
• 2 eggs
• pinch of salt
• 2 bananas (very ripe)
• ¾ cup sour milk (add a tspn
vinegar to milk)
• 1 tspn baking powder
• 1tspn vanilla
Method:
Method Sift flour, salt and
baking powder and set aside. Combine sugar, butter, beaten eggs, vanilla and
bananas. Alternatively add sour milk and flour. Use a loaf tin for a
bread-type result. Can be made in a cake tin.
Bake at 160°C for approximately 40 mins.
(To test, it is firm to touch on the top)
